Beets and Berries with Lavender Quinoa

For a very long time, I had trouble eating beets. I know they’re pack with a lot of nutrition, but the taste didn’t sit well with my mouth. Now, after experimenting in the kitchen, I know how to make some delicious beets. Inspired by Jeremy Fox’s recipe, I decided to make beets and berries with lavender quinoa. Not only it’s a fabulous summer recipe, the lavender, one of my favorite flowers, really brings out the freshness of summer days. Enjoy! 🙂

Beets and Berries with Lavender Quinoa

Ingredients
  

  • 2-4 beets
  • 1 shallot
  • 3 cloves of garlic
  • 1/2 cp vinegar
  • 1/4 cp lemon juice
  • 1/4 cp orange juice
  • 1/2 cp water
  • 1 cp quinoa
  • 1 cp water
  • 1 tbsp olive oil
  • 1-2 lavender
  • 1 thyme
  • 1 parsley
  • 1 cp almonds
  • salt for taste
  • pepper for taste

Step 1

Marinate your beets with herbs, salt, vinegar, garlic, shallots, lemon and orange juice. You can also use your own distinct flavors for the marinated process. Cover with water and boil it, or put it in the 400F oven for about 90 mins to 2 hours (make sure you cover your beets with foil if you’re going to put in the oven.). Now this is SUPER important step. Once the beets are done cooking, cool it down, take off the skin, and SAVE the marinate. Place the beets in the refrigerator over night and allow the marinate to soak up the beets for at least 24 hours. You can also save the cook beets for 2-3 days.

Step 2

Place the quinoa in a large pot or hotel pan. Add thyme and lavender (not too much. Lavender can be very strong. You can also place the herbs in a cheese cloth.). Fill the quinoa with hot water, sprinkle salt, and boil or steam the grain for about 22-25 mins. Cool and drizzle the quinoa with olive oil. Add salt for taste.

Step 3

Wash and place the berries of your choice on a sheet pan. In low temp, about 150F (If you’re oven can’t go that low, 200F is perfectly fine.) bake the berries for 30 mins. Cool and set it to the side.

Step 4

Toast your nuts (I chose almonds, but you can choose any nuts of your choice.) in a 350F-370F oven for 7 mins or until golden brown. Cool and set it to the side for plating.

There you have it. A beautiful healthy delicious dish that’s great for lunch. Beets have an awesome color. It’ll always look wonderful on your plate. You can eat it like this or also drizzle some vinaigrette over your plate. Fresh basil for garnish. Enjoy! Don’t forget to check out my other recipes. More content coming soon! 🙂
