I love muffins. They’re versatile, easy to make, and a great snack option.
I’ve found an easy muffin recipe that’s not only diary free, but can make different flavors like chocolate chip, blueberries, zuccihini, cheese etc.
Versatile Muffins
Easy mufffin recipe that’s versatile and diary free!
Ingredients
- 2 Cups AP Flour
- 1 Cup Sugar If you want savory, don’t add the sugar!
- 2 Teaspoon Baking Powder
- 1 1/2 Teaspoon Salt
- 2 Whole Eggs
- 1/3 Cup Oil
- 1/2 Cup Oat Milk
- 1 Tablespoon Vanilla No vanilla, if savory!
- 2 Cups Blueberries, chocate chips, cheese, zucchini For the zucchini muffin, don’t forget the dried fruit, cinnamon, and nuts!

After mixing the ingredients and placing the batter in muffin pans, cook for about 15 to 20 minutes in the 350F oven.
Reminder, if you’re thinking about doing a savory type muffiin, do not add the sugar or vanilla. For my cheese muffin, I just replaced the vanilla with chopped thyme.
